Skyline Ribs

Ah, this was just genius born from mainly the mind of a person from our country up-north and implemented with the help of a Cincinnatian.

(Idea to add to any of these: Bacon.... everything I have ever put bacon on has tasted better).

INGREDIENTS

    • 3 lb of of ribs (pork or beef)

    • 4 cans of Skyline Chili

    • 1 medium yellow onion

    • 1 tablespoon of minced garlic

    • Montreal Steak Spice

    • 1 small can (8 oz?) of Chipotle peppers in Adobo sauce (optional for spicy version)

COOKING

    1. Empty all 4 cans of chili into a crock pot and set to high heat.

    2. Chop the onion into a large mixing bowl and sprinkle liberally with Montreal Steak Spice. Toss the onion pieces like a salad to ensure even distribution of the spice onto the onion pieces.

    3. Put the spiced onion and garlic into the crock pot with the chili and mix well.

    4. Optional spicy version: Empty chipotle peppers with Adobo sauce into a food processor and chop into a paste. Divide the paste into two equal portions and add one of the ½-portions into the crock pot with the chili, onions and garlic. Mix well.

    5. Cut the rib rack(s) into large chunks that can fit into the crock pot and remain covered with the chili mixture while cooking.

    6. Cook on high heat for 4 hours, then on low heat for 4 hours.

SERVING

    1. Remove the ribs from the pot and place in a bowl by themselves.

    2. Use a spoon or ladle to fish out any residual rib meat or bones from the chili.

    3. Serve the chili in a separate bowl as a sauce.

    4. Serve the second ½-portion of chipotle paste as a dipping sauce for those who like their food extra spicy.
