Potato Soup
POTATO SOUP
1 small chopped onion
1 Tbsp flour
2 Tbsp oil
1 tsp red paprika
salt to taste
½ cup chopped celery
½ green pepper, chopped
2-3 carrots sliced
1 tsp parsley flakes
diced potatoes
eggs
Brown onions in oil until golden yellow. Put flour in cold water in a tight fitting jar and shake. Pour
onto onions and add paprika and parsley. Add more cold water to avoid lumps. Let simmer for awhile
with the celery, peppers and carrots because they need a little longer to get tender. By adding the
potatoes figure 20 minutes. If you want to add eggs, drop into the soup and let cook during the last 10-
15 minutes. Salt to taste. Serve with sour cream and let people add a small amount of vinegar to their
bowl (no more than a cap full) if they want.
