German Nut Cake

350' 25-30 min (use toothpick test to see if done)

1 cup sugar

7 jumbo egg yolks or 8 extra large

3 heaping tsp. bitter cocoa powder

1 tsp. vanilla

2 cups walnuts out of shell but not yet grated Then grate them and set aside

3 heaping Tblsp breadcrumbs

Mix yolks, sugar, vanilla, and cocoa till thick and creamy.

Beat egg whites separately very stiff, fold into the "creamy" together with the grated nuts, crumbs, and baking powder. (batter will be fluffy not runny)

Pour into 2 pans that have pam sprayed in them. It will not rise much because the nuts are heavy.

Icing: Use 2 sticks unsalted butter. 3 heaping Tblsp. 10X sugar. 2 heaping tsp. cocoa powder. Beat till fluffy and ice the cake.
